Tips while cooking indian food

Indian food is about flavour, aroma, colour, oils, spices, varieties. Use all ingredients carefully and intellegantly. Few grams of fat or salt can ruin the meal. Following are the tips to win hearts for food you cooked today

  1. Spices – each one has the purpose. Some will give colour and some will impart flavour. Understand its purpose.
  2. Salt – it completes the dish. But my advise is lesser the better. Keep some stories unfinished.
  3. Oils and fats – use correct oil as per the recipe. For example north indian dishes can be cooked in butter or mustard oil, south indian in coconut oil.
  4. Do not overpower flavors – use each spices wisely so that it should not overpower original flavors. Like lamb dish should taste like lamb and not like biryani.
  5. Give enough time for cooking – indian food is not instant or stir fry. It requires patience. Slow cooking makes wonder.
